ARARA
Fazenda Santa Izabel, located in the southern Minas region, covers 126 hectares and is home to five families, local workers, its own factory and a quality assurance laboratory. In 2013, Nobletree Coffee Farms acquired Santa Izabel and began a transformation journey through investments in infrastructure, technology and environmentally friendly practices. Nobletree Coffee Farms has also ncreated a nursery with a selection of over 40 varieties. This Arara variety with yellow fruits, a cross between Yellow Catuai and Obatã which has high resistance to rust, has excellent potential for cutting quality. To bring out the complex, sweet flavors of this particular batch, the team chose to ferment whole cherries anaerobically for 120 hours in airtight tanks equipped with check valves.
